Kabusecha is a type of Sencha which has been covered and is a ‘Fukamushi’ tea, meaning ‘deep steamed’ tea; giving richness. This variety has been covered for about two weeks. Covering the tea-plant forces it to put in extra effort to reach the sunlight which increases the amount of amino acids, creating the beautiful umami flavour. This tea is easy to brew and strikes a great balance between a refreshingly light Sencha and the delicate umami of a Gyokuro.
